Yum Yum...

I'm not very good at making hot meals for dinner.  By the time I get home from an eight-hour work day, it's the last thing I feel like doing.  But, I really do enjoy cooking and tonight it just felt right.

 For dinner we had lemon, garlic, rosemary chicken, scalloped potatoes, and green beans.  The chicken was an experiment, but it turned out so great that I thought I would share.  I'm always looking for simple ways to cook chicken.


1. Cut chicken into strips
2. Heat olive oil in pan
3. Place chicken in pan
4. Season chicken with garlic powder, rosemary, fresh lemon juice, and parsley
5. Cover and cook
6. Uncover and brown - only slightly

It was amazing!
Then I made zucchini bread for dessert.  It was amazing.  Just a simple recipe, I don't feel like typing it on here, but let me know if you would like the recipe and I'll post it. :)
