As Promised :)

These are honestly the BEST chicken Enchiladas I have ever had.  Try them!
(We like to double the recipe and have left-overs).



Ingredients:
~2 Cups Shredded Cooked Chicken
~1 1/2 Cups Shredded Cheddar Cheese (Divided)
~1/2 Cup Ranch Dressing
~1/4 Cup Sour Cream
~2 Tablespoons canned green chilies (We like at least 8 oz. per batch)
~Red Pepper (Optional - we like ours with a little 'kick' and put in about 1/2 teaspoon per batch)
~Flour Tortillas

Directions:  Mix chicken, 3/4 cup cheddar cheese, dressing, sour cream, green chilies, and red pepper.  Place desired amount of mixture into tortillas.  Roll and place in baking dish.  Top with remaining cheese.  Bake at 350 degrees for 20 minutes or until cheese is slightly browned.  Serve with salsa and sour cream. 

Makes about 4 servings.

Yummy! We love our enchiladas, we're always looking for new recipes on them! Thanks! We will have to try these. I'm interested to see how it tastes with the ranch dressing in it!
