Chicken Taco Soup:

     
  •  2 T olive oil
  • 1 Large onion
  • 2 med. Carrots
Cook these until tender then add:
  • 3 cups chicken broth
  • 1 can 14 oz. diced tomatoes
  • 1 can ranch style beans
  • 1 can black beans drained and rinsed
  • 1 cup picante sauce
  • 1 cup frozen corn
  • 1 tsp cumin
  • ½ tsp pepper
  • ½ tsp oregano
  • ½ tsp chili powder
  • 1/8 tsp paprika

Combine ingredients, bring to a boil then simmer for 30 minutes
  • add 2 cups cooked shredded chicken
Serve with cilantro, avocado, cheese, sour cream, and tortilla chips.

That does looks good. I've had beef taco soup, but never chicken. I think I might have to make this sometime.
